It was a good day in the classroom as several students showed good progress. I am doing a few more writeups tonight but I also need to get all the pictures useable on my flash drive. I may even get some posted to the web.
Tonight I had banku for dinner in peanut soup. Banku is corn that is ground up and then soaked in water for a while. The doughy substance ferments and then portions of it are worked in with more water while being heated over fire. The heating takes about 30 minutes and there is more fermentation which produces a very unusual flavor due to the alcohol. It is very tasty with the peanut soup and some Tilapia. It is very filling and cheaper than rice so it is a very popular dish here in the south. I should note that the corn is bought in bags and they have to separate out the chaff. I saw a woman doing this today as we drove home.
I am beginning to be excited to return.
